ลองมารู้จักและทำความเข้าใจกันเกี่ยวกับ พืช ที่จะนำมาใช้ทำนำ้มันหอมระเหยกันก่อน บางที อาจจะช่วยทำให้เราเข้าใจ ว่า พืชใด มีนำ้มันหอมระเหยที่จะนำมาใช้ประโยชน์ได้บ้าง และทำให้เราสามารถย้อนกลับไปเข้าใจเกี่ยวกับ โมเลกุลสารประกอบต่างๆ ที่มีอยู่ในพืชแต่ละชนิดได้ "พืช" เป็นสิ่งมีชีวิต เมื่อเราศึกษาเกี่ยวกับพืชนั้น เราต้องรู้ชื่อทางพฤกษศาสตร์ ( Botany ) ของพืช รู้จักระบบการจำแนกอนุกรมวิธาน สำหรับการจัดเรียงพืช จัดกลุ่ม จัดชนิดของพืชที่มีความหลากหลายชนิดมากมาย โดยระบบการจำแนกอนุกรมวิธานของพืชนั้น จะมีการแบ่งกลุ่มใหญ่ๆ ลงไปถึงกลุ่มเล็ก โดยเริ่มต้นที่ Kingdom , Sub-Kingdom , Division , Class , Order , Family , Genus , Species and Sub-species ตามแผนภาพ ด้านล่างนี้

Plant Anatomy หรือ กายวิภาคศาสตร์ของพืช เป็นการศึกษาลักษณะทางกายภาพของพืช เช่น ใบ ดอก ผล รูปร่างและขนาดของพืช ด้วยความแตกต่างของลักษณะทางกายภาพนี้ เป็นหลักพื้นฐานที่จะช่วยให้นักวิทยาศาสตร์สามารถจำแนกประเภทของพืชได้ ว่าอยู่ในตระกูลใด กลุ่มใด ดังนั้น จึงต้องการมีกำหนด รูปร่าง แนวโครงสร้าง และองค์ประกอบต่างๆ เพื่อให้จัดกลุ่มได้ เช่น ลักษณะใบ มีความกว้าง ความยาว มีขน หรือไม่มีขน หรือดอกไม้ ที่มีสีต่างกัน ก็ต้องใช้ชื่อสกุลที่ต่างกัน และจะช่วยให้เราเข้าใจถึงส่วนประกอบของพืชที่เรานำมาสกัดนำ้มันหอมระเหยด้วย
